2,300-Year-Old Beer Found Sealed in a Chinese Bronze Bottle

Most evidence of ancient alcohol comes down to little more than a stain on the inside of a jar, a faint residue for archaeologists to puzzle over. A tomb in northwestern China has offered something almost unheard of: nearly a gallon of the actual liquid, sealed away for more than two thousand years and still there to test.

A Bottle Sealed Two Layers Deep

The pale blue green fluid came from Tomb M39 at the Shanjiabao cemetery in Guyuan, in China’s Ningxia Hui Autonomous Region, a site sitting close to a stretch of the Warring States era Qin Great Wall. Archaeologists excavated 183 tombs at the cemetery, 179 of them belonging to Qin people, the population later credited with unifying China under the short lived Qin dynasty in 221 BC.

Inside one burial, researchers found a bronze vessel with a distinctive garlic shaped mouth, a form closely associated with Qin culture and with storing alcoholic drinks. What set this particular bottle apart was how it had been sealed. Textile had been packed into the opening, and an organic tempered daub, a clay-like mud mixed with plant material, covered the outside. Professor Wen Rui of Northwest University’s School of Cultural Heritage, whose team carried out the chemical analysis, explained that this double layer of sealing worked together with the tomb’s burial conditions to sharply limit evaporation and outside contamination over more than two thousand years.

Nearly a Gallon, Still There to Test

When researchers opened the vessel under controlled conditions, they recovered approximately 3,740 milliliters, a little over 3.7 liters, of clear, light blue green, odorless liquid, along with a small amount of sediment. Chinese researchers describe it as the most completely preserved and information rich alcoholic liquid yet publicly reported from the Qin state of the Warring States period.

The pale blue green color comes from copper ions that leached into the liquid from the bronze container over the more than two thousand years it sat sealed inside the vessel.

Reading an Ancient Recipe From Sediment

To determine exactly what the liquid was, the team ran infrared spectroscopy, ultra high performance liquid chromatography coupled with mass spectrometry, and microscopic examination of starch grains, phytoliths, and yeast. More than 2,400 organic compounds turned up in total, along with over 100,000 starch grains and more than 8,500 yeast cells, an unusually detailed chemical and biological record for a find this old.

Researchers detected high concentrations of lactic and oxalic acids but very little tartaric acid, a pattern pointing toward a cereal-based drink rather than fruit wine, and one closely comparable to artificially aged huangjiu, a traditional Chinese fermented grain beverage still made today. Around 92 percent of the identified starch grains came from broomcorn millet, with the remainder from Triticeae, the cereal group that includes wheat and barley. Damage on some of the grains suggested they had been ground and heated during preparation, and researchers believe the drink was likely produced using qu, a fermentation starter made from grains colonized by microorganisms that allows the conversion of starch into sugar and fermentation to happen at the same time.

“If I had to put it simply, the biggest breakthrough here is that we found a large jar of ancient grain alcohol still preserved inside a Qin tomb from more than 2,300 years ago, and through scientific testing we were able to confirm not just that it was alcohol, but trace exactly what grains it was brewed from and how it was likely made,” Wen said. “In the past, studying ancient alcohol often meant finding just a trace of residue on the inside wall of a pottery vessel. This time is different. It’s the difference between looking at a blurry photograph and holding a genuinely detailed brewing record.”

Not Quite Modern Beer, Not Quite Wine

Calling the drink beer is convenient, but only up to a point. It was fermented from cereals and yeast, yet it was not a hopped, modern-style beer. Its production method instead belongs to China’s long tradition of grain-based fermented drinks made with microbial fermentation starters. Unlike modern Chinese liquor, which is typically distilled, this ancient drink was a fermented beverage, technically closer in method to the huangjiu and rice wines that developed later in Chinese history, particularly millet-based versions.

Wen’s team was unable to determine the drink’s original alcohol content, since small volatile molecules like ethanol tend to fully degrade over more than two thousand years of burial. Based on comparable finds and the technology available at the time, he estimated the original alcohol content likely did not exceed about 10 percent. He was direct about whether any of it could still be sampled today: it cannot, both because it now contains almost no alcohol and because the copper leached from the bronze container poses a heavy metal poisoning risk. Archaeologists who have tasted similar ancient residues in the past have reported no wine flavor left at all, only an earthy, musty taste.

Why It Ended Up in a Grave

The bottle’s presence in a tomb reflects a Chinese burial philosophy sometimes summarized as treating death as an extension of life, the belief that the deceased should be able to enjoy the same comforts in the next world that they had in this one. Alcohol carried social and ritual weight in ancient China well beyond ordinary drinking, serving as a medium connecting the living to ancestors and spirits during sacrifice, a marker of social status during banquets, and a lubricant for everyday social bonds.

Wen also noted that the discovery has implications beyond a single tomb. Because the burial ground is believed to have served as a communal cemetery for frontier soldiers and settlers rather than an elite-only site, the presence of a technically sophisticated fermented drink suggests that complex brewing had spread beyond the aristocracy to reach ordinary frontier officers and garrison households, hinting at a materially richer frontier life than previously assumed, and highlighting alcohol’s role in military morale and daily social life along the Qin frontier.

Part of a Much Longer Brewing Story

The Shanjiabao bottle sits within a far deeper history of deliberate fermentation. At Raqefet Cave in present-day Israel, residues preserved in stone mortars dating to roughly 13,000 years ago have been interpreted as evidence of beer production by Natufian hunter-gatherers, likely tied to ritual feasting. China’s own brewing record stretches back further still, with research at the Shangshan site in Zhejiang identifying evidence for rice-based beer roughly 10,000 years old, described as the earliest known alcohol fermentation technique in East Asia. By about 5,000 years ago, people at Mijiaya near Xi’an were brewing a more complex drink from broomcorn millet, barley, Job’s tears, and tubers.

Set against that long timeline, the Shanjiabao discovery adds a later but remarkably well-documented chapter, one where Qin brewers combined selected cereals, microbial starters, and sophisticated sealing techniques within an already established fermentation tradition, this time preserved well enough to study directly rather than infer from scattered residue. The findings, authored by Ruru Chen, Hongying Zhang, Xiaoyang Wang, Wei Ge, Xuekai Qi, Nan Xiao, and Rui Wen, were published in the Journal of Archaeological Science: Reports.
